Prune and Walnut Stuffing
This is the perfect stuffing for a whole chicken or 6 chicken breasts by combining fresh flavours with Prune and Walnut Log
- 60g butter
- 1 onion, finely chopped
- ½ cup celery, finely chopped
- 260g Prune and Walnut Log, roughly chopped
- 2 cups fresh breadcrumbs
- 1 tablespoon chopped parsley
- 1 teaspoon fresh thyme
- grated zest of orange
- salt and freshly ground pepper
Melt butter in a pan; add the onions and the celery; cook until soft. Add the prune and Walnut Log. Cook for about 4 minutes over low heat, stirring continuously; put the mix into a bowl.
When cool add the breadcrumbs, parsley, thyme and orange zest. Season to taste with salt and pepper.
